  • 1 lb beef stew meat, cubed
  • 1 tbsp olive oil
  • 1 onion, diced
  • 3 garlic cloves, minced
  • 4 carrots, sliced
  • 3 celery stalks, chopped
  • 2 potatoes, peeled and cubed
  • 1 can (14.5 oz) diced tomatoes
  • 4 cups beef broth
  • 1 cup green beans, trimmed
  • 1 cup frozen corn
  • 1 tsp dried thyme
  • 1 tsp dried basil
  • Salt and pepper to taste

Instructions

  1. Heat olive oil in a large pot over medium heat. Add beef and sear until browned. Remove and set aside.
  2. In the same pot, sauté onions and garlic until fragrant.
  3. Add carrots, celery, and potatoes. Cook for 5 minutes, stirring occasionally.
  4. Pour in diced tomatoes and beef broth. Return beef to the pot.
  5. Stir in thyme, basil, salt, and pepper. Bring to a boil, then reduce heat and simmer for 40 minutes.
  6. Add green beans and corn. Simmer for another 15 minutes until vegetables are tender.
  7. Adjust seasonings to taste. Serve hot with crusty bread if desired.
