1 lb large shrimp, peeled and deveined
1 tbsp oil (coconut or vegetable)
3 cloves garlic, minced
1 tbsp fresh ginger, grated
1 tbsp red curry paste
1 can (13.5 oz) coconut milk
1 tbsp fish sauce
1 tbsp lime juice
1 tsp brown sugar
Fresh cilantro, for garnish
Cooked jasmine rice, for serving
Heat oil in a skillet over medium heat. Add garlic and ginger, sauté for 1 minute.
Stir in red curry paste and cook for another 1-2 minutes until fragrant.
Pour in coconut milk, fish sauce, lime juice, and brown sugar. Stir to combine.
