  • 1 cup fresh strawberries, diced
  • 8 oz cream cheese, softened
  • 1/2 cup powdered sugar
  • 1 tsp vanilla extract
  • 1 cup heavy cream, whipped
  • 1 box vanilla cake mix (prepared as directed)
  • 1/4 cup strawberry jam
  • 1/2 cup crushed shortbread cookies
  • Powdered sugar for dusting

Instructions

 

  1. Prepare the vanilla cake batter as directed and bake in a thin sheet pan. Let cool.
  2. In a bowl, beat cream cheese, powdered sugar, and vanilla until smooth. Fold in whipped cream.
  3. Spread strawberry jam over the cooled cake, followed by the cheesecake filling.
  4. Sprinkle diced strawberries and crushed shortbread cookies over the filling.
  5. Carefully roll the cake into a log shape, using parchment paper for support.
  6. Chill for at least 2 hours before slicing. Dust with powdered sugar before serving.
