This Sweet & Spicy Korean BBQ Meatloaf recipe fuses the bold flavors of Korean BBQ with classic comfort food. Packed with gochujang, garlic, and a touch of sweetness, this meatloaf is tender, juicy, and coated in a mouthwatering Korean glaze.   • 1 ½ lbs ground beef

  • ½ cup breadcrumbs

  • 1 egg

  • 1 small onion, finely chopped

  • 2 cloves garlic, minced

  • 2 tbsp gochujang (Korean chili paste)

  • 1 tbsp soy sauce

  • 1 tbsp sesame oil

  • 2 tbsp ketchup

  • 1 tbsp brown sugar

  • 1 tsp grated ginger

  • ½ tsp black pepper

  • ½ tsp salt

  • 2 tbsp chopped green onions (for garnish)

  • Sesame seeds (optional garnish)

Instructions

  • Preheat oven to 375°F (190°C).

  • In a large bowl, combine ground beef, breadcrumbs, egg, onion, garlic, soy sauce, gochujang, sesame oil, salt, pepper, and ginger.

  • Mix well until fully combined.

  • Shape the mixture into a loaf and place in a greased loaf pan or on a lined baking sheet.

  • In a small bowl, mix ketchup, gochujang, and brown sugar. Spread half the glaze over the meatloaf.

  • Bake for 45–50 minutes or until internal temperature reaches 160°F (71°C).

  • Remove from oven, brush with remaining glaze, and let rest for 10 minutes.

 

  • Slice, garnish with green onions and sesame seeds, and serve.

Notes

  • For extra moisture, mix in 2 tablespoons of milk.

  • Substitute ground turkey or pork for a lighter version.

 

  • Gochujang spice level varies—adjust to taste.
