For the lemon filling:

  • 1 1/2 cups granulated sugar

  • 1/4 cup all-purpose flour

  • 4 large eggs

  • 2/3 cup freshly squeezed lemon juice

  • Zest of 1 lemon

  • Powdered sugar, for dusting (optional)

Instructions

  1. Preheat oven to 350°F (175°C). Line a 9x13-inch baking pan with parchment paper.

  2. In a bowl, cream butter and sugar. Mix in flour and salt until crumbly.

  3. Press crust mixture evenly into the pan. Bake for 15–18 minutes until lightly golden.

  4. Meanwhile, whisk together sugar and flour. Beat in eggs, lemon juice, and zest.

  5. Pour lemon mixture over warm crust and return to oven. Bake 20–25 minutes or until set.

  6. Let cool completely. Dust with powdered sugar. Cut into bars and serve.
