  • 1/4 tsp nutmeg
  • 1 tbsp lemon juice
  • 2 tbsp flour

  • 1 cup sugar
  • 1/4 cup water
  • 1/4 cup heavy cream
  • 3 tbsp butter
  • 1/2 tsp sea salt (plus more for sprinkling)

For the Egg Wash:

  • 1 egg (beaten with 1 tbsp water)

Instructions

  • Preheat oven to 375°F (190°C).
  • Prepare the filling: In a large bowl, toss apple slices with sugar, brown sugar, cinnamon, nutmeg, lemon juice, and flour. Set aside.
  • Make the caramel sauce: In a saucepan, combine sugar and water. Cook over medium heat until it turns a golden caramel color. Remove from heat and carefully stir in cream, butter, and sea salt until smooth. Let it cool slightly.
  • Assemble the pie: Roll out the bottom pie crust and fit it into a 9-inch pie dish. Add half of the apple filling, drizzle with half of the caramel sauce, then add the remaining apples and drizzle the rest of the caramel sauce over the top.
  • Top the pie: Place the second pie crust over the apples. Trim and crimp the edges, and cut a few slits in the top for steam to escape. Brush with egg wash and sprinkle with extra sea salt.
  • Bake for 50-55 minutes until the crust is golden and the filling is bubbling.
  • Let the pie cool for at least 2 hours before serving.
