Learn how to make a delicious Rachel sandwich packed with layers of turkey or corned beef, Swiss cheese, coleslaw, and Russian dressing.

  • 4 slices rye bread
  • 4 slices turkey or corned beef
  • 4 slices Swiss cheese
  • 1 cup coleslaw
  • 2 tbsp Russian dressing
  • 2 tbsp butter

Instructions

  1. Spread Russian dressing on one side of each rye bread slice.
  2. Layer turkey (or corned beef), coleslaw, and Swiss cheese on two slices of bread.
  3. Top with remaining bread slices to form sandwiches.
  4. Butter the outer sides of each sandwich.
  5. Heat a skillet over medium heat and grill sandwiches until golden brown on both sides and cheese is melted (about 3-4 minutes per side).
  6. Slice and serve warm.

Notes

  • Substitute turkey for corned beef to make it lighter.
