    • 4 boneless, skinless chicken breasts
    • 1 tsp chili powder
    • 1 tsp cumin
    • 1 tsp garlic powder
    • Salt and pepper to taste
    • 2 tbsp olive oil
    • 1 cup shredded cheddar cheese
    • 1 cup heavy cream
    • 1/4 cup chicken broth
    • 1/2 cup diced tomatoes (optional)
    • 1/4 cup chopped cilantro (for garnish)

 

Instructions

    • Season chicken breasts with chili powder, cumin, garlic powder, salt, and pepper.
    • Heat olive oil in a skillet over medium-high heat. Cook chicken for 5-6 minutes per side or until fully cooked. Remove and set aside.
    • In the same skillet, add heavy cream and chicken broth. Bring to a simmer.
    • Stir in shredded cheddar cheese until melted and smooth.
    • Add optional diced tomatoes and mix well.
    • Pour cheese sauce over the cooked chicken breasts.
    • Garnish with fresh cilantro and serve hot.
