  • 1 lb carrots, peeled and sliced

  • 2 tbsp butter

  • 2 tbsp honey or sugar

  • 1 tbsp fresh lemon juice

  • 1/2 tsp lemon zest

  • 1/4 tsp salt

  • Fresh parsley for garnish (optional)

Instructions

  • Bring a pot of water to a boil and cook sliced carrots for 5–7 minutes, until tender but not mushy.

  • Drain carrots and set aside.

  • In a large skillet, melt butter over medium heat. Add honey (or sugar), lemon juice, zest, and salt.

  • Stir until mixture is smooth and begins to bubble.

  • Add the cooked carrots and toss to coat evenly with glaze.

  • Cook for an additional 2–3 minutes, stirring gently.

 

  • Garnish with fresh parsley if desired and serve warm.

Notes

  • Adjust sweetness by using more or less honey or sugar.

  • Use baby carrots as a time-saver.
