  • 1 tbsp Worcestershire sauce
  • 1 tsp thyme
  • 1 tsp rosemary
  • Salt and pepper, to taste

Instructions

  1. Season roast with salt and pepper.
  2. Set Instant Pot to 'Sauté' mode, heat oil, and sear roast on all sides.
  3. Remove roast, then sauté onions and garlic until softened.
  4. Stir in beef broth, tomato paste, and Worcestershire sauce, scraping the bottom.
  5. Add roast back, along with carrots, potatoes, thyme, and rosemary.
  6. Set Instant Pot to 'Pressure Cook' on high for 60 minutes.
  7. Allow natural pressure release for 10 minutes, then manually release.
  8. Slice and serve with vegetables.
