  • 2 cups shredded chicken (cooked)
  • 1 can black beans (drained and rinsed)
  • 1 cup corn kernels
  • 1 can diced tomatoes with green chilies
  • 1 cup salsa
  • 1 1/2 cups shredded cheddar cheese
  • 1/2 cup sour cream
  • 1 tsp cumin
  • 1 tsp chili powder
  • Salt and pepper to taste
  • 2 cups cooked rice (optional)
  • Tortilla chips for topping

Instructions

  • Preheat oven to 375°F (190°C).
  • In a large bowl, mix together shredded chicken, black beans, corn, diced tomatoes with chilies, salsa, sour cream, cumin, chili powder, salt, and pepper.
  • Spread cooked rice (if using) in the bottom of a greased 9x13 baking dish.
  • Pour the chicken mixture over the rice and spread evenly.
  • Top with shredded cheddar cheese and crushed tortilla chips.
  • Bake for 25-30 minutes, until the cheese is melted and bubbly.
  • Let it cool for 5 minutes before serving.
