  • 1 lb ground beef
  • 1 packet taco seasoning
  • 1 can black beans, drained
  • 1 can corn, drained
  • 1 cup salsa
  • 2 cups shredded cheddar cheese
  • 3 cups Fritos
  • ½ cup sour cream (optional toppings)
  • ¼ cup diced tomatoes (optional toppings)
  • ¼ cup chopped jalapeños (optional toppings)

Instructions

  • Preheat oven to 350°F (175°C).
  • In a skillet, cook ground beef until browned. Drain excess fat.
  • Add taco seasoning, black beans, corn, and salsa to the beef. Simmer for 5 minutes.
  • Spread half of the Fritos on the bottom of a casserole dish.
  • Pour beef mixture over the Fritos, then layer with shredded cheese.
  • Top with the remaining Fritos and another layer of cheese.
  • Bake for 20 minutes, until cheese is melted and bubbly.
  • Garnish with sour cream, diced tomatoes, and jalapeños, if desired.
