  • 1 pound breakfast sausage

  • 2 cups all-purpose flour

  • 1 tablespoon baking powder

  • ½ teaspoon salt

  • ½ teaspoon black pepper

  • 1 cup shredded cheddar cheese

  • 1 cup milk

  • 2 large eggs

  • ¼ cup melted butter

Instructions

  1. Preheat oven to 375°F (190°C). Grease or line a muffin tin.

  2. In a skillet, cook sausage over medium heat until browned. Drain excess grease.

  3. In a large bowl, mix flour, baking powder, salt, and pepper.

  4. Stir in cheese, cooked sausage, milk, eggs, and melted butter until combined.

  5. Spoon batter into muffin cups, filling each about ¾ full.

  6. Bake for 18-22 minutes or until golden brown and a toothpick inserted comes out clean.
