Instructions

  • Preheat oven to 350°F (175°C). Line a 9x9-inch baking pan with parchment paper and lightly grease.
  • In a bowl, mix graham cracker crumbs, sugar, and melted butter. Press the mixture evenly into the bottom of the prepared pan.
  • Bake for 8-10 minutes, until lightly golden. Set aside to cool.
  • In a large bowl, whisk together sweetened condensed milk, egg yolks, key lime juice, and zest until smooth.
  • Pour the filling over the cooled crust and smooth the top.
  • Bake for 15-20 minutes, until the filling is set but still slightly jiggly in the center.
  • Cool at room temperature, then refrigerate for at least 2 hours before slicing into bars.
  • Serve with whipped cream if desired.
