1 lb ground beef
8 oz mushrooms, sliced
1 medium onion, diced
2 cloves garlic, minced
2 cups beef broth
1 cup sour cream
2 tbsp all-purpose flour
2 tbsp olive oil or butter
1 tsp paprika
Salt and pepper, to taste
12 oz egg noodles (or pasta of choice)
Fresh parsley, chopped (for garnish)
Instructions
Cook the egg noodles according to package instructions. Drain and set aside.
Heat olive oil or butter in a large skillet over medium heat. Add ground beef and cook until browned. Remove from skillet and set aside.
In the same skillet, sauté diced onion and garlic until fragrant. Add mushrooms and cook until softened.
Stir in the flour and cook for 1 minute. Gradually add beef broth, stirring constantly to prevent lumps.
Return the cooked ground beef to the skillet. Add paprika, salt, and pepper. Let the mixture simmer for 5-7 minutes.
Lower the heat and stir in sour cream until well combined. Simmer for 2-3 minutes (do not boil).
Toss the sauce with the cooked noodles. Garnish with fresh parsley and serve warm.
Notes
You can substitute sour cream with Greek yogurt for a lighter version.
Add a splash of Worcestershire sauce for an extra depth of flavor.
