This easy ground beef stroganoff recipe delivers a flavorful, creamy dish made with tender ground beef, mushrooms, and a rich sauce. Ideal for busy weeknights.

  • 1 lb ground beef
  • 8 oz mushrooms, sliced
  • 1 medium onion, diced
  • 2 cloves garlic, minced
  • 2 cups beef broth
  • 1 cup sour cream
  • 2 tbsp all-purpose flour
  • 2 tbsp olive oil or butter
  • 1 tsp paprika
  • Salt and pepper, to taste
  • 12 oz egg noodles (or pasta of choice)
  • Fresh parsley, chopped (for garnish)

Instructions

  • Cook the egg noodles according to package instructions. Drain and set aside.
  • Heat olive oil or butter in a large skillet over medium heat. Add ground beef and cook until browned. Remove from skillet and set aside.
  • In the same skillet, sauté diced onion and garlic until fragrant. Add mushrooms and cook until softened.
  • Stir in the flour and cook for 1 minute. Gradually add beef broth, stirring constantly to prevent lumps.
  • Return the cooked ground beef to the skillet. Add paprika, salt, and pepper. Let the mixture simmer for 5-7 minutes.
  • Lower the heat and stir in sour cream until well combined. Simmer for 2-3 minutes (do not boil).
  • Toss the sauce with the cooked noodles. Garnish with fresh parsley and serve warm.

Notes

  • You can substitute sour cream with Greek yogurt for a lighter version.
  • Add a splash of Worcestershire sauce for an extra depth of flavor.
  • Use ground turkey or chicken as a variation.
