  • 1 lb boneless, skinless chicken breasts
  • 2 cans (15 oz) great northern beans, drained and rinsed
  • 1 can (15 oz) corn, drained
  • 1 can (4 oz) diced green chiles
  • 4 cups chicken broth
  • 1 tsp cumin
  • 1 tsp chili powder
  • 1/2 tsp onion powder
  • 1/2 tsp garlic powder
  • 1/4 tsp cayenne pepper (optional)
  • 1 block (8 oz) cream cheese, softened
  • Juice of 1 lime
  • Salt and pepper to taste
  • Fresh cilantro, shredded cheese, and tortilla chips for topping

Instructions

  • Place chicken breasts at the bottom of the crockpot.
  • Add beans, corn, green chiles, chicken broth, and all the spices.
  • Cover and cook on low for 6-8 hours or high for 3-4 hours.
  • Remove the chicken and shred it with two forks, then return it to the crockpot.
  • Stir in softened cream cheese and lime juice until fully combined.
  • Cook for an additional 15-20 minutes on high, or until the chili is creamy.
  • Serve hot with cilantro, shredded cheese, and tortilla chips as desired.
