2 lbs ground beef
1/2 cup onion, finely chopped
1/4 cup green bell pepper, finely chopped
1 cup crushed Ritz crackers
1/2 cup milk
2 large eggs, beaten
1/3 cup ketchup
1 tsp salt
1/2 tsp black pepper
1/4 tsp garlic powder
1/4 tsp onion powder
For the Glaze:
1/2 cup ketchup
1/4 cup brown sugar
1 tsp yellow mustard
Instructions
Preheat oven to 350°F (175°C) and lightly grease a loaf pan or baking dish.
In a large bowl, mix ground beef, onion, bell pepper, crushed Ritz crackers, milk, eggs, ketchup, salt, pepper, garlic powder, and onion powder until combined.
Shape the mixture into a loaf and place it in the prepared pan.
In a small bowl, mix together ketchup, brown sugar, and mustard for the glaze. Spread half of it over the meatloaf.
Bake for 45 minutes, then spread the remaining glaze over the meatloaf.
Continue baking for another 15-20 minutes, or until the internal temperature reaches 160°F (71°C).
Let the meatloaf rest for 10 minutes before slicing and serving.
Notes
You can use breadcrumbs in place of Ritz crackers if preferred.
For a spicier kick, add a dash of hot sauce to the glaze.
Leftovers can be refrigerated for up to 3 days or frozen for longer storage.
