  • 2 lbs ground beef
  • 1/2 cup onion, finely chopped
  • 1/4 cup green bell pepper, finely chopped
  • 1 cup crushed Ritz crackers
  • 1/2 cup milk
  • 2 large eggs, beaten
  • 1/3 cup ketchup
  • 1 tsp salt
  • 1/2 tsp black pepper
  • 1/4 tsp garlic powder
  • 1/4 tsp onion powder
  • For the Glaze:
    • 1/2 cup ketchup
    • 1/4 cup brown sugar
    • 1 tsp yellow mustard

Instructions

  • Preheat oven to 350°F (175°C) and lightly grease a loaf pan or baking dish.
  • In a large bowl, mix ground beef, onion, bell pepper, crushed Ritz crackers, milk, eggs, ketchup, salt, pepper, garlic powder, and onion powder until combined.
  • Shape the mixture into a loaf and place it in the prepared pan.
  • In a small bowl, mix together ketchup, brown sugar, and mustard for the glaze. Spread half of it over the meatloaf.
  • Bake for 45 minutes, then spread the remaining glaze over the meatloaf.
  • Continue baking for another 15-20 minutes, or until the internal temperature reaches 160°F (71°C).
  • Let the meatloaf rest for 10 minutes before slicing and serving.

Notes

  • You can use breadcrumbs in place of Ritz crackers if preferred.
  • For a spicier kick, add a dash of hot sauce to the glaze.
  • Leftovers can be refrigerated for up to 3 days or frozen for longer storage.
