  • 1 tbsp chipotle powder

  • 1 tsp onion powder
  • 1 tsp smoked paprika
  • ½ tsp salt
  • ½ tsp black pepper
  • ½ cup ranch dressing
  • 2 tbsp adobo sauce (from chipotle peppers)
  • 4 large flour tortillas
  • 1 cup shredded cheese (cheddar or Mexican blend)
  • 1 cup cooked rice
  • ½ cup black beans (drained and rinsed)
  • ½ cup diced tomatoes
  • ¼ cup chopped cilantro
  • ¼ cup diced red onion
  • 1 avocado, sliced

Instructions

  • Marinate the Chicken: In a bowl, mix olive oil, chipotle powder, garlic powder, onion powder, smoked paprika, salt, and black pepper. Coat chicken and let it marinate for 30 minutes.
  • Grill the Chicken: Heat a grill or pan over medium-high heat. Cook chicken for 5-7 minutes per side until fully cooked (internal temp 165°F). Let rest, then slice.
  • Prepare Chipotle Ranch Sauce: In a small bowl, mix ranch dressing and adobo sauce.
  • Assemble the Burritos: Lay out tortillas. Add cheese, rice, black beans, grilled chicken, tomatoes, cilantro, red onion, and avocado. Drizzle with chipotle ranch sauce.
  • Grill the Burritos: Fold in the sides, roll tightly, and grill in a pan for 2-3 minutes per side until golden and crispy.
