Ingredients

  • 1.5 lbs boneless, skinless chicken breasts
  • 2 cups chicken broth
  • 1 cup long-grain white rice (uncooked)
  • 2 cups broccoli florets (fresh or frozen)
  • 1 cup shredded cheddar cheese
  • 1 can (10.5 oz) cream of chicken soup
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • Salt and pepper to taste
  • Optional: ½ cup sour cream for extra creaminess

Instructions

  1. Place chicken breasts in the crockpot. Season with garlic powder, onion powder, salt, and pepper.
  2. Add chicken broth, cream of chicken soup, and rice to the crockpot. Stir to combine.
  3. Cover and cook on low for 4-5 hours or on high for 2-3 hours, until chicken is fully cooked and rice is tender.
  4. Remove chicken, shred it, and return to the crockpot.
  5. Add broccoli florets and cook for another 20-30 minutes until tender.
  6. Stir in cheddar cheese (and sour cream, if using) until melted and creamy.
  7. Serve warm and enjoy!

  • If using frozen broccoli, no need to thaw it before adding to the crockpot.
