Ingredients

Scale
  • 4 cod fillets (about 4 oz each)

  • 1 cup buttermilk

  • 1 cup all-purpose flour

  • 1 cup cornmeal

  • 1 tsp paprika

  • 1 tsp garlic powder

  • 1 tsp onion powder

  • ½ tsp salt

  • ½ tsp pepper

  • Vegetable oil, for frying

  • 4 sandwich buns

  • 1 cup shredded lettuce or coleslaw mix

  • Tartar sauce (store-bought or homemade)

  • Pickles (optional)

Instructions

  1. Prep the Cod: Pat cod fillets dry. Soak in buttermilk for 10–15 minutes.

  2. Mix Coating: In a shallow bowl, combine flour, cornmeal, paprika, garlic powder, onion powder, salt, and pepper.

  3. Heat Oil: Heat vegetable oil in a deep skillet or fryer to 350°F (175°C).

  4. Dredge Fish: Remove cod from buttermilk, allowing excess to drip off. Dredge thoroughly in flour-cornmeal mixture.

  5. Fry: Fry cod fillets for 3–4 minutes per side or until golden brown and crispy. Drain on paper towels.

  6. Assemble Sandwich: Spread tartar sauce on buns. Layer with fried cod, shredded lettuce or slaw, and pickles if using.

  7. Serve Immediately: Enjoy hot and crispy!

Notes

  • For extra crispiness, double-dip the fish by repeating the buttermilk and flour steps.

  • Serve with lemon wedges for a bright, fresh flavor.

  • Use brioche buns for a richer sandwich.
