  • 4 boneless, skinless chicken breasts
  • 2 cups sliced mushrooms (button or cremini)
  • 1 cup heavy cream
  • 1/2 cup chicken broth
  • 1 small onion, diced
  • 3 garlic cloves, minced
  • 2 tbsp olive oil
  • 2 tbsp butter
  • Salt and pepper to taste
  • Fresh parsley for garnish

Instructions

  • Season the chicken breasts with salt and pepper.
  • Heat olive oil in a large skillet over medium heat. Sear the chicken breasts until golden brown on each side, about 4-5 minutes per side. Remove from skillet and set aside.
  • In the same skillet, melt the butter. Add onions and garlic, sauté until soft.
  • Add the mushrooms and cook until tender, about 5 minutes.
  • Pour in the chicken broth and heavy cream. Stir and bring to a simmer.
  • Return the chicken breasts to the skillet and cook for another 8-10 minutes, or until the sauce thickens and the chicken is fully cooked.
  • Garnish with fresh parsley and serve.

Notes

For extra flavor, add a splash of white wine to the sauce. Serve with mashed potatoes, rice, or pasta to soak up the creamy sauce.
