Ingredients

  • 1 lb ground beef
  • 1 can cream of mushroom soup
  • 1 can diced tomatoes with green chilies
  • 1 cup corn (canned or frozen)
  • 1 1/2 cups shredded cheddar cheese
  • 1 package frozen tater tots
  • 1 small onion, diced
  • Salt and pepper to taste

Instructions

  • Preheat oven to 375°F (190°C).
  • In a large skillet, cook ground beef and diced onion over medium heat until beef is browned and onion is soft. Drain excess fat.
  • Stir in cream of mushroom soup, diced tomatoes with green chilies, corn, salt, and pepper.
  • Transfer beef mixture to a 9x13 baking dish, spreading evenly.
  • Sprinkle shredded cheddar cheese over the beef mixture.
  • Top with frozen tater tots, covering the entire casserole.
  • Bake in the preheated oven for 25-30 minutes or until tater tots are golden brown and crispy.
  • Let cool for 5 minutes before serving.

Notes

  • For extra flavor, sprinkle some crispy bacon or jalapeños on top before baking.
  • You can substitute ground turkey for beef if preferred.
