  • 2 large boneless, skinless chicken breasts, halved horizontally
  • Salt and pepper, to taste
  • 1 cup all-purpose flour
  • 2 large eggs, beaten
  • 1 1/2 cups panko breadcrumbs
  • 1/2 cup grated Parmesan cheese
  • 1 cup marinara sauce
  • 1 1/2 cups shredded mozzarella cheese
  • 1/4 cup chopped fresh basil, for garnish
  • Olive oil, for frying

Instructions

  • Preheat oven to 400°F (200°C).
  • Prepare the chicken: Season the chicken breasts with salt and pepper. Coat each piece in flour, dip in beaten eggs, and then coat in a mixture of panko breadcrumbs and grated Parmesan.
  • Fry the chicken: Heat olive oil in a skillet over medium heat. Fry the chicken until golden brown on both sides, about 3-4 minutes per side. Transfer to a paper towel-lined plate.
  • Assemble the dish: Place fried chicken breasts on a baking sheet. Spoon marinara sauce over each piece and sprinkle with shredded mozzarella.
  • Bake: Cook in the oven for 10-15 minutes, or until the cheese is bubbly and the chicken reaches an internal temperature of 165°F (74°C).
  • Garnish and serve: Top with fresh basil and serve hot over pasta or alongside a crisp salad.
