Ingredients

  • Boneless, skinless chicken breasts (cut into bite-sized pieces)
  • Pasta (penne or rigatoni)
  • Mozzarella cheese (shredded or fresh)
  • Olive oil
  • Garlic (minced)
  • Diced tomatoes (canned)
  • Tomato paste
  • Heavy cream
  • Fresh basil (optional)
  • Salt
  • Pepper
  • Red pepper flakes (optional)

Instructions

  • Cook pasta according to package directions, drain, and set aside.
  • In a large skillet, heat olive oil over medium heat. Add chicken pieces and cook until browned and cooked through. Season with salt and pepper.
  • Remove chicken from skillet and set aside. In the same skillet, add garlic and sauté until fragrant.
