  • 4 cups fresh or frozen pitted cherries

  • 1 cup granulated sugar (divided)

  • 1 tbsp lemon juice

  • 1 tbsp cornstarch

  • 1 cup all-purpose flour

  • 1½ tsp baking powder

  • ½ tsp salt

  • ½ cup unsalted butter (melted)

  • ¾ cup milk

  • 1 tsp vanilla extract

Instructions

  1. Preheat oven to 375°F (190°C).

  2. In a saucepan, combine cherries, ½ cup sugar, lemon juice, and cornstarch. Cook over medium heat until thickened.

  3. Pour the cherry mixture into a greased baking dish.

  4. In a bowl, mix flour, baking powder, salt, and remaining ½ cup sugar.

  5. Add melted butter, milk, and vanilla to the dry ingredients. Mix until just combined.

  6. Drop spoonfuls of batter over the cherries.

  7. Bake for 35–40 minutes or until the topping is golden brown and cooked through.

  8. Cool slightly and serve warm, optionally with ice cream.

Notes

  • You can use frozen cherries, just thaw and drain first.

  • Adjust sugar based on cherry sweetness.
