Cheesy Mashed Potato Puffs are crispy on the outside, soft and cheesy inside, and loaded with flavor. These bite-sized delights are easy to make, perfect as an appetizer, snack, or side dish. Made with mashed potatoes, cheese, eggs, and seasonings, they’re baked until golden brown. Serve them warm for the best texture and taste!

Ingredients

  • 2 cups mashed potatoes
  • 1 cup shredded cheddar cheese
  • 2 eggs
  • ¼ cup milk
  • ¼ cup chopped green onions
  • ¼ cup grated Parmesan cheese
  • ½ teaspoon garlic powder
  • ½ teaspoon salt
  • ¼ teaspoon black pepper

 

  • ½ cup breadcrumbs (optional, for extra crispiness)

Instructions

  1. Preheat oven to 400°F (200°C) and grease a muffin tin.
  2. In a mixing bowl, combine mashed potatoes, cheddar cheese, eggs, milk, green onions, Parmesan, garlic powder, salt, and pepper. Mix well.
  3. Scoop the mixture into the muffin tin, filling each cup about ¾ full.
  4. Optionally, sprinkle breadcrumbs on top for extra crispiness.
  5. Bake for 20-25 minutes or until golden brown and slightly crispy on the edges.
  6. Let cool slightly before removing from the tin. Serve warm and enjoy!
